Founded by inventor and aerospace engineer Daniel Prieto Preston, Cacao Prieto is part distillery, part chocolate factory, and part research lab. Preston’s Dominican heritage informs a variety of traditional, organic and experimental chocolate products and spirits. The distillery’s offerings are vast: from small batch Don Estaban Cacao Liqueur to Colombian Single Origin Coffee Liqueur to Widow Jane Kentucky Bourbon, which is blended with the help of Master Distiller Dave Pickerell (originally of Maker’s Mark fame). The brick-and-glass Red Hook space includes a gift shop, a courtyard with chickens, and the Lingua Botanica bar.
